Home made Mayonnaise recipe from Mauritius by my wife

Quick and damn easy with only 6 ingredients and 10 minutes needed at most and 5 minutes for cleanup !. Why don't you do your mayonnaise instead of buying supermarket ones with full of preservatives and you are not even sure about the quality of the ingredients. With your own made mayonnaise, you can choose the oil, the fresh eggs, fresh lemons and add your taste of mustard and any herbs you wish. Not to forget that for what it's worth, your homemade mayonnaise will cost you much cheaper. 

Ingredients: 
1 large egg yolk 
1/2 teaspoon of salt (a bit less is better but add to taste) 
1 teaspoon vinegar (same as the one you put in your salad) 
1 1/2 teaspoon lemon juice (we used the lemon juice from supermarket for salad) 
1/2 teaspoon of Mustard powder 
3/4 cup of oil (we used sunflower oil - Brand: Slite and a plastic cup) 
& if you wish 
Small pinches of herbs (rosemary, thyme and parsley) 

Instructions: 
1. Separate the yolk from the white (we used an egg separator but it can be done without it easily) 
2. Put your egg yolk in a bowl, add the salt, vinegar, lemon juice, mustard powder and herbs. 
3. Use your mixer on the ingredients to get a bright yellow color. Mix all together for 30 seconds. 
4. Put the oil drop by drop with a spoon while mixing the whole. Use 1/4 of the cup of oil. 
5. Continue with the rest of the oil you should put it very little by little and each drop by drop you put in the mixture should be mixed completely before continuing. 
6. When you have finished all the oil, you are done. Normally the mixing operation should take 8 minutes. You can add a spoon of hot water while mixing if it is too thick. 

But, with the above ingredients it won't be :)  We are sure about it because we did it ! :)

If you have an immersion mixer instead no need to add the oil little by little. You simply have to mix everything together. Start from the bottom to the top. 






What I love about home made mayo :)
It is creamy and rich with a natural tanginess with makes you want to dip your fries into them. Also, this is perfect when you are planning a BBQ and got many guests coming. You don't have to ruin yourself over buying mayonnaise from the store. You can make as much as you want for half the price !.
And anyway store bought mayonnaise really taste like a watery imitation compared to this one.

How much time can you keep it ? [VERY IMPORTANT]
Last and definitely not LEAST ! .. Home made mayonnaise does not contain any preservatives and turn bad often over 48 hours up to 1 week (kept in fridge). You should take care to get fresh and good looking eggs, else look for pasteurized eggs.
If you use it quite rarely, it would be better for you to buy the store one. But for recipes requiring a lot of mayonnaise or like when you need a lot of mayonnaise for special occasions then its definitely better to make your own.

Food day @ Port Louis - Help The Needy..

I appeal to all my blog readers and Mauritians in general to support this initiative. A food day is being organized on the 3rd of april 2011. Food and other items will be sold on that day. It is a Fund Raising activity in order to help the poor.

C’est ene situation bien grave ki bizen pa pran a la legere. si li vine 1 zaffaire legal ek ki iskcon gagne so proces li pou vine 1 precedent ek nimporte kotsa dans moris, bane mosque pou faire proces pou empeche vende porc pres ek bane mosque, partout kotte ena temple hindou bane vendeur mine frite / riz frite viande par exemple ek tou lezotte commerce ki vande la viande cuite pou bizen lev paker aller. li ene zaffaire tres tres grave ki la plupart moricien pa p pran serieusement. si li vine kumsa bane sinoi pou nepli kav vande porc dans chinatown around jummah mosque !
dans nou ti pays multiculturel kotte ena dimoune osi ki pena religion nou pa gagne droit impoze lors zotte nou fasson penser. nous bizen less zotte vivre zotte la vie..

la loi ine bien faire ek iskcon pa kav declare ki li pa konne la loi, li pa ene excuse sa. ine publier notice dans la gazette ek ine ena plaque lors site aber si ena otan devot ki alle iskcon ek sa pou zenne zotte eski zotte pa ti trouver kan batiment la ti p ranzer ? astere ki zotte vine faire cinema ek amene tappeur pou vine kraze vitre tousala.. !! 
Mwa mo penser ki zotte faire sa par mechanceter parski zotte ler montrer ki c zotte ki dirige pays ek zotte kav faire saki zotte ouler. asterla la boug macdo la deza ena 1 terrain ki line paye cher ek line faire ranze 1 batiment lors la ! ki li pou faire ar sa astere!! si zotte ti faire zotte cinema avant ti pou fini trouve 1 solution. Ve dire zotte p faire sa par mesquinnerie ek parski zotte ena moV lesprit !
Constitution of the Republic of Mauritius should be respected !! sinon dimoune pou coummence viv kuma sovaz dans moris.

P.S: I haven't been blogging since nearly 2 months since dad passed away. I am glad to be back in the mauritian blogosphere and looking forward catching back on the events and writing salty articles.. soon ! More to come ;)

100th Post - KFC closed !

100th Blog Post - Woohooo .. lolzz. Big Up to Myself !! hahahahha
Let's immortalise this .. exactly @20:50 lolz!!
This post came up into my mind yesterday night while watching des terres et des hommes, by yann artus bertrand. The film went on to show how chicken was manufactured, then beef and finally pigs.
The chicken didn't or rarely see sunlight, some were handicapped, at birth, there first contact is with a machine, then transferred on conveyor belts to the screening to select the most sick which are not sent to be let grown up. They are immediately sent to be crushed in a tumbler like machine.
The other chickens are stored in racks and then taken to the breeding shelter. They are stored there for 6-8 weeks are which they are taken in the dark so that they stay calm. Then again the conveyor belt as they were brought when they were born. They are tied upside down on another conveyor and given electric shocks so that they pass out. Then, a rotary cutter slice their throats. After which, they are selected by weight and packed !! .. That's mass production of Chicken !! .. Example of companies using Mass produced chicken are KFC, Burger King, Mc Donald for the most well known.
The Pigs are brought up in small cages of 0.66metres wide !! .. At birth, their tails are cut, since they are like stored in cages, they tend to eat their friends infront of them. They cannot move nor walk!! They stay like that till they are killed.

KFC mauritius has been given a prohibition order to stop its activities after a virus has been detected in its chicken !! .. Furthermore, the flour packs are not labelled thus we cannot know which flour it is, whether animal flour, pig flour or rat flour !!! ..

Ever got a disgusting taste while eating a KFC product ??
Ever had a savourless soft drink at KFC ??
It has been found that KFC had expired soft drinks and expired chickens !!
YOU could have eaten those products ...

My Advice : STOP eating MASS PRODUCED meat, whether chicken, beef or Porc.

Mauritian Food and Lunch Foods.. :)


As per our habits, after hanging around in chinatown and buying stuffs specially naz, she's always got stuffs to buy !! lolz.. We went to eat some boulettes at benny B at the Caudan Waterfront Foodcourt which is a nice place to have lunch mainly in Port Louis ... :) Jumping here and there on the pavements so as not to walk into water .. however, we ended up with the trousers' legs drenched :) [Read & See More]
We were happy though because it is not often that we get drenched in Port Louis :) hehe ..
Then we went for some boulettos .. For those of you who are not familiar with these kind of foods, it is of chinese origin, multi culturality of mauritius obliges ! .. Most mauritians eat the plates of others, thus most of Mauritians would have atleast once tasted Mine frite, riz frite, bryani, curry and rougaille.. and chips and western cuisine..

Whatever be the case, soo.. we like eating boulettes .. lolz.. where was i !! lolzzz
well, yea, in the boulettes series, you have a triangle ( thers is fish in that and egg too, it is in the shape of triangle piece of cake but infact it is not sweet) ..Then you have the most common, the fish balls ( which you have fish inside obviously!!however, you won't see the fish inside, it only taste fish) .. you have saw mai and chou which you got cabbage inside.. and then you have also fried fish balls.. in which thers mourgat fish and then Meat balls which we love soo much .. and then there is LONG .. which a like twice a fish ball and it is spicy .. all that you can eat it with or without the fish soup and with or without chilli :)
Today, we got new bowls, take away ones, wonder why they doing that, in fact, the other kind of bowls in ceramic were nicer to eat it, but guess those ones are more hygienic and aesthetic !! .. :) That was a nice time with mehnaz at caudan :)

Bazaar of Port Louis-history by itself

Today i thought about making a stroll around my place and i thought why not share with my blogger friends some pictures of the bazaar of Port Louis, Such a nice place.
Some history, Those pictures of the Bazaar ( Market ) which you can see, are of the new market. Which has been built some years ago, 5 years ago i think. Well, and before that, stood there a very ancient market which on a sad night, coming from the mosque, and right in my road which is the same road as that of the bazaar, about 300metres up. Well i seen loads of smoke and a big fire. I ran there with my neighbours and we couldn't believe it. The bazaar was on Fire !! .. [Read More & See More] Yes, more than a century of history was on fire. Still remembering that scene, the clock on the front door, has a glass cover, and the glass was melting !! .. The firemen arrived quickly, seen they were only 500metres away. And they were only 2 vans, one infront and one of the back road. with each 2 men only trying to extinguish that big fire which was devastating that old wooden dome market.
What a night it was!! A night in history and writting this down today so that it can be remembered.. and found one day if someone looks up for some more infos..

The bazaar today is however nicer but the scenes of the old one tend to repeat themselves, as those plots of dead vegetable leaves and which long ago were put in "dromes", exactly the same scene when i used to go with my dad to the market. 10 years later...

Only the building changed, the people and their habits remained the same :) Long live Mauritius...

Healthy Tips For Daily Things

Very healthy practices.. Seen on the Web..

Answer the phone by LEFT ear .
Do not drink coffee TWICE a day.
Do not take pills with COOL water .
Do not have HUGE meals after 5pm.
Reduce the amount of OILY food you consume.
Drink more WATER in the morning, less at night.
Keep your distance from hand phone CHARGERS .
Do not use headphones/earphone for LONG period of time.
Best sleeping time is from 10pm at night to 6am in the morning.
Do not lie down immediately after taking medicine before sleeping.
When battery is down to the LAST grid/bar, do not answer the phone as the radiation is 1000 times.
